Got to tell you mate, that was a lovely lump of pork. The crackling was the best I have EVER produced. Smokey crackling is just devine!

Tonight it is Sea Bass, scallops, roasted butternut squash, salad and a healthy amount of champagne.

Black pudding
Mushroom
Apple
Chilli
Onion
Coriander
Sage
Black pepper

Next time I would increase the proportion of mushroom.

Sea Bass is a treat for the wife. She started a new job this week. My treat is the scallops to go with the Sea Bass and to finish the bottle of champagne after my wife has had her glass... Before sneaking into the garage with a bottle of wine and a pot of car wax!
